Portland area - how much time for city?

We were just in Portland for a long weekend in early December. We were limited to one day in the city. I think two days would have been better. We bought a beautiful photo of the japanese gardens in the fall, but would have liked to have had the time to actually go there! The city is cute and has some nice places to eat. You are correct about the vegan, vegetarian choices. We are from Virginia and there are very few options like that around here. It seemed almost everywhere we dined had something on the menu specifically for vegetarians.
Our day out of the city, we headed to Multonomah falls. It is beautiful. If we had more time, we would have gone to more of the waterfalls. It is not far at all from the city. We had a very nice lunch under the falls in the glass restaurant. I recommend dining there.
We would have liked more time to explore, but out daughter was in a race and this trip was about her race and some small side time for us to check out Portland. Enjoy!

If you or husband are interested in Beer then Portland has a lot to offer. They even hold a Beer Fest call OBF (Oregon Brewers Festival) in July. http://www.oregonbrewfest.com/ I went last year and it was a lot of fun.
No matter how much time you spend there make sure to check out the culinary night life. Portland has a lot to offer.
