My husband is a prime rib affectionado. He claims that Lord Fletchers in Rancho Mirage consistently has the best prime rib he has ever eaten. It draws a lot of the "older" crowd; has an English pub atmosphere; the salad is marvelous; you can't go wrong here. Dinners run $16-25. During the tourist season it's a good idea to have a reservation.

Don't get too psyched for dining in Palm Springs (depending upon where you are from). A lot of "pretty good" food. Shame on the Moon is a nice restaurant in Rancho Mirage. Kind of surreal in that it's an even split between blue hairs and gay men (seem to coexhist pretty well).
Couple I found on the web that look good are Las Casuela Terraza and Del Rio Taqueria (haven't tried yet but going again next week).
