There is a publication - The Oregon Coast Mile by Mile. They also have a website you can check out. Has lots of good info.
Hwy 20 W has been experiencing delays due to road construction. You can check for delays on ODOT's Tripcheck.
The area between Florence and Coos Bay is not very scenic as the road is lined with trees- no ocean views until you get farther south.
I think there is a lot to see and do between Lincoln City and Florence. Could keep you busy for several days!
In Newport I highly recommend Clearwater Restaurant. Has changed hands and had a redo. Food was excellent. There is an outdoor deck where you can dine and watch the sea lions as they bask in the sun.

If you are unlucky enough to have a rainy day on the way out to the coast, or just want to stop and have a break in your drive, a museum option is the Evergreen Aviation and Space Museum in McMinnville.

There are some neat airplanes and even some space program stuff there. But the highlight is the famous "Spruce Goose" airplane created by Howard Hughes during World War II and flown only once. Years later, it ended up in this museum.

Question we are trying to solve as we take an adventure from CA through Oregon for the fall colors, help please: we will be leaving Bend October 16, with plans to drive the Mt Hood loop and the Columbia river loop, and walk the trail through Silver Falls as well, eventually going thru Portland to Astoria and back down the coast....the time seems to be the same either to The Dalles or Silver Falls park, is one drive more special than the other? going to the Park first would allow us to go to Portland, then drive both loops another day and wind up back in Portland...and while I'm at it are both roads open?? thanks for any insight and suggestions!

I think Silver Falls would be more scenic than the Dalles.
Some of the best fall color is between Sisters and Eugene along the McKenzie Hwy.
Lots of vine maple which turns brilliant red.
Friends hiked at Clear Lake last weekend and pictures show color was at its best.
Clear Lake has a lovely, easy hike if you have time- but it's about 5 miles.
If you did the McKenzie Hwy, you could also stop at Belknap Hot Springs for a soak, also nice walking trails there.
