The Jewish holiday of Passover frequently overlaps with the Easter holidays as observed by most Christians. But in 2005, the Easter date for most Christians is extra-early (March 27), so it won't overlap with Passover, nor with most spring breaks and vacations, including the April Patriots' Day holiday (the basis for many New England spring breaks), etc.

The ethnic mix of NYC really has little to do with why the city doesn't shut down on Easter!
More than the usual number of businesses (stores, restaurants, etc.) will be closed on Easter Sunday, but you will still find plenty to see and do on that day. It certainly won't be like Christmas Day, when a high percentage of stores and restaurants are closed.
