To get back to serious replies (though I agree with the idea that you are way too planned out and should relax a bit for spontaneity's sake!).....only a few of your choices, in my opinion, are worth going out of your way for. Knowing nothing about what else you'll be doing in between eatinmg activities, I would say only these are worth making a special trip for:

Balthazar, Grammery Tavern, Pearl, and Blue Ribbon. I think Norma's, Second Ave Deli, Barney Greengrass, Sarabeths, Serendipity, and Lundy's are overpriced tourist traps to be avoided at all costs.

Dinner- try Le Brenardin- w.51st -fabulous French seafood-

Do Serendipity for LUNCH -not dinner- have their hamburger with Caviar and sour cream and the frozen Hot chocolate-- And be prepared to lay down and sleep all afternoon!
