Hi,
Not sure what all this chatter about Balthazar is for, considering it is NOT a steakhouse. STK in meatpacking is a slick, nyc nightlife style of steakhouse. Old Homestead (mentioned), also in the meatpacking, is the complete opposite- an "Old School" steakhouse and is open early, and serves enormous martinis. There is also Primehouse in the Flatiron district, which has an upscale but not snobby feel, with meat coming from a dedicated animal named Prime. In midtown east, Sparks is a traditional, saloon-like spot, and Quality Meats is a newish, modern design style steak place smack in midtown.
Also, in Tribeca, Landmarc is a temple to meat, and Dylan Prime, already mentioned, is a modern but cozy steakhouse/restaurant. Also mentioned, Strip House, is a play off a brothel with a sexy interior but delicious meat. I believe they open fairly early as lots of after work cocktails are served at the smallish bar.
There is also keen's, markjoseph's, del frisco's, delmonico's and the BLT restaurants.
You didn't really specify what you were looking for in the steakhouse, besides steak, so hopefully the above gives you a breadth of options depending on your style!
