I would suggest taking Scenic Hwy 12 from Bryce to Torrey, Utah. This is a fantastic scenic drive. Torrey is an excellent midway point. Many new motels and you are only a few miles from Capitol Reef National Park which IMHO is an unknown jewel in the Utah National Parks system.
From Bryce to Moab taking Hwy 12 is 270 miles. Torrey is about 110 miles from Bryce. Your only other real choice for lodging, if you take Scenic Hwy 12 will be Green River but that only 55 miles from Moab.

I agree with Utahtea about Torrey. I wanted to put in a nice plug for Green River, however. There is a nice little golf course and a river museum in Green River. There are also more choices for lodging. You can also get one of the world's best hamburgers at Ray's Tavern. Also the people are very nice. Have fun.

I also agree with UtahTea about taking Hwy 12 and staying in Torrey. However, I have another small plug for Green River. It's out in the middle of nowhere and has little to recommend it EXCEPT, in late summer, roadside vendors sell the absolute best tasting chilled watermelon I have ever had, bar none!
