Maui plans

Hi all,
My husband and I are traveling to Maui for the first time in the beginning of April. We have reservations at Mamas Fish House at 8:00 on April 4 which is Easter Sunday so we were thinking of doing Road to Hana that day as well but weren't sure if we'd run into issues with places being closed that day because of Easter?? Also, how is driving back in the dark from the restaurant? We'll be staying in Lahaina so that's where we'd be driving to. I can get reservations at 3:00 but wasn't sure if that would mean we'd have to rush our sightseeing during the Road to Hana in order to get to Mama's in time?? I also just saw that there's reservations available on that Saturday at 3:00 also. Would you recommend doing the Road to Hana Saturday instead of Easter Sunday? Just not sure how bad crowds will be vs. Sunday??

According to their website map, Hana is about 43 miles from Mama's Fish House. Count on it taking all of an hour to get back from Hana. I also saw that Mama's has an Inn onsite. Could you get a one night reservation there and then drive to Lahaina on Monday? My wife and I stayed in a condo in Kehei, but we did come back in the dark after a luau in Lahaina.
While on Maui. try to get a pass to drive up to the top of Haleakala for a sunrise. You do need to make an online reservation to go up (limited parking). They do collect the National Park fee if you don't have a National Parks pass.
I also enjoyed the trip up to the Io Needle in the interior of the island. The cheapest gas for your rental car is at the Costco not too far from the airport. There is often a wait to get to the pumps. Have your Costco membership card with you to put into the pump before your credit card.
