You will love it! Maui is my favorite place on earth.
I would skip the Aquarium-overpriced and you can see the real thing by renting some snorkling gear. Get the Maui This Week flyer and take a look at the ads for weekly snorkling gear rentals. With some you can get a $5 boat trip to Molokini. The best place to see the fish is just off shore south of Lahaina. You can ask at the shop and they will give you a map and several places to go. (Can you tell I love to snorkle?)
It sounds weird but the K-Mart near the Kahului airport has a good souvenier section. Good place to get coffee, guava jam, postcards, macadamia nuts, etc. Just the typical kookie stuff but a good place to pick up a few things for the folks back home.
The trip to Hana is nice but an all day thing. If you don't want to go that far to see the lush jungle, take a trip to Iao Needle Park. It is small but amazingly green and beautiful.
I always take one evening to go to Kimo's in Lahaina for dinner. The Hula Pie dessert is wonderful. Mama's Fish House is casual and has good food. I never miss the fish and chips at the Hula Grill in the Kaanapali Resort complex.
I'm not a fan of the Kaanapali Resort but a nice thing to do around sunset is to to the the Sheraton Black Rock and they have a torch lighting ceremony and cliff diving (well 1 cilff dive anyway.)

I know you will have a great time!! We just got back from our 2 week trip to the Big Island and Kauai. The trip from the east coast is tough but well worth it...
We love snorkeling-on Maui, liked snorkeling at Honolua Bay the best(try to get there early for ease of parking and calmest water). Get some of those disposable underwater cameras(we like the blue fuji ones) and have a blast. K-mart has very reasonable 1-hour photo processing-it's fun to see what you've captured!!
