We usually get my brother-in-law a restaurant gift certificate for Christmas. His new bride is a vegan, and so I'm looking for a vegan-friendly restaurant recommendation anywhere on Maui. She is generally able to find something she can eat on a menu, but I thought it would be nice to give them something that would work well for her needs.

We are vegiterian, too. Last year when we visited, we found many places; few to name are Veg-out (810 Kokomo Rd Ste 19, Haiku, Maui, HI 96708-5072), Pita Paradise (34 Wailea Gateway Pl, Unit A-108, Wailea, Maui, HI 96753-6526), and an indian restaurent Monsoon India (760 South Kihei Road, Suite 109, Kihei, Maui, HI 96753).

We had trouble finding veggy food in Big-Island, just in case if you're going there ;-)

Note: OP is looking for vegan - NOT vegetarian, although the latter often do have some vegan dishes.
