bachslunch: here is how Bite into ME defines the different lobster roll styles. I am from South Carolina so I have no idea if they got it right. But it sounds good to me!

Maine style = with light mayonnaise & fresh chives
Connecticut style = with hot butter
Picnic style = includes layer of coleslaw, hot butter, and a dash of celery salt

Fresh chives? Never heard of that or did ever have it. The styles are debated constantly and which is best.

PlishBrown, interesting. Never encountered the picnic style roll, and have never heard of the geographic designations, though found references to the latter online. According to Wikipedia, it was invented at Perry's in Milford, CT and was the hot kind drenched in melted butter. Also have had lobster rolls with either celery or onion bits added to mayonnaise, but never chives.

A friend got a $25 lobster roll with fries at Sturbridge Seafood (MA) this week. It looked very full. It also contained a little mayo, finely diced celery and TARRAGON! I've had the Bite Into ME lobster roll. The chives aren't objectionable but I think some people like my husband would not like tarragon. When I make lobster rolls at home, I use a seasoning called Camp Mix (made in NH) that is salt, pepper and garlic powder.

Although supermarket steamed lobster is fresh, it doesn't always have the briny flavor of lobster shack lobster. Last lobster I bought was hard shell and it did have that good flavor. We tend to make lobster rolls at home more often in summer during the soft shell season so I'm not sure if hard shells have more flavor or not. I've also heard supermarket lobsters might have been in a tank too long and starved so flavor is different.

I will continue to do further research with special concentration in the Damariscotta/Rockland area next week.

Still in Maine and without my regular fodors id.
UPdate - monday, July 3, 2:30 pm, long line at Red's. We won't stop there this hear either. BEsides, we had lobster rolls at Day's in Yarmouth. Average roll. Noisy picnic table due to backing yp to I95 and the people at next table with barking dog.
Supper at Shaw,s in Bristol but opted for seafood pie/husband had clams.
July 4: late lunch at McLoon's. Both had incredible lobster rolls, sweet and tender. Almost every picnic table full. McLoon,s is featured in. Urrent issue of Yankee magazine. Dh got the expensive $27 Rolls Royce extra big roll bit i decided to have desset: white chocolate and raspberry bread pudding.
July 5: pilgrimage north so i required lunch at Smokey bbq lobster place across from airport almost on MDI. Smoked mussels and shared a grilled lobster. Flavor not much different from regular lobster. Thai at night.
July 6: faltering on lobster quest with ordinary picnic lunch and leftover thai for dinner.
JUly 7: great breakfast. Visited Two Lights on Cape Elizabeth. Pouring rain so average lobster roll eaten in car to avoid long wait for table. Did not agree with Yankee rating almost as high as McLoon's. dinner at local comfort food Spurwink's since I,m craving vegetables. Opted for seafood mac 'n cheese with summer squash and a broccoli salad. Dh opts for chicken pot pie.
JUly 8: Big mistake visiting Holy Donut for mid-morning snack. Decided to skip lunch and have early dinner at Ken's in Scarborough where you can have choice of batter or crumb fried clams.
That's it. It's not possible to have lobster at ecery meal. Please forgive iPad typos.

We are just back from Maine. I was starting a trip report when I saw this old thread, so thought I would add our thoughts. We are lobster roll novices, but thought I would share our two experiences.

Day's Crabmeat and Lobster just off I-295 at Yarmouth exit that also has Maine Visitors Center made a convenient stop enroute from airport. Walk up with some covered picnic tables plus other tables and chairs on lawn with a water view. The line moved quickly, but food delivery slow.
I see on the website that you have choices about mayo, but we didn't know that and just ordered rolls.
Simple roll. Bread tasted good to us along with the fillings.

Erica's at tip of Harpswell. Long drive to get to Erica's and Dolphins at marina (our backup dining spot). Rewarded with decent breeze off the water (very hot day), boat traffic for entertainment, and atmosphere of lobster traps on the dock. Walk up with few picnic tables and insufficient umbrellas. Bottled drinks from vending machine. The line move slowly, but the food delivery fast. Tasty rolls filled to overflowing with lobster and crab (you can also get a combo). I couldn't taste any mayo or seasoning. Both husband and I agreed we preferred to Day's roll, but we were also hungrier. We also tried a piece of blueberry cake (warmed) and it was rich, but we managed to finish it.
