Bellagio has Shintaro..
this is a review I found..we were there a few years ago, it was great then!
<< Shintaro is a Japanese restaurant-sushi bar like no other. Start at the sushi bar and then move inside to the modern dining room with natural stone floors and marble teppanyaki tables, where individual chefs will cook your teppan dinner, with all the flash of a Benihana.>>

Sushi in downtown--not in the hotels per se, but we Hawaii folk like to go to Makino, a Japanese buffet. It's just minutes away from downtown at the outlet mall. There's another Makino on Decatur that's very good.
You can find good "Hawaii" Japanese food at the snack bar at the California Hotel! Yum yum, tastes just like home!

Thanks Melissa. I did see the info on Makino on Decauter, and thought about going there with DH before we head downtown (we're spending 1st night at the Orleans). Yes, we will check out the snack bar at the Cal. The dining there sounds great, and I recall you mentioning you really like the Pasta Pirate.
