Key Biscayne

We will be staying 3 nights on Key Biscayne in May. Our main purpose is to snorkel. Can we snorkel from the shoreline or do we need a snorkel tour boat. We would like a recommendation for a good snorkel company in the area.
We are game for other activities if there is something that rates as a "must do". We are traveling from Fort Myers and want to make the most of our stay. Do you think 3 nights is enough, for we could do 4.

Bill Baggs Cape Florida State Park in the south has palm trees, white sand and clear water (good for snorkeling). You can bicycle between Crandon Park and the state park, partly on bike paths.
