In my opinion, you do not have enough time to do Niagara Falls and Niagara on the Lake. It will take you 30-40 min to drive from the Falls to NOTL and what's the point? The fun thing about NOTL is stopping at the wineries and maybe having a nice relaxed meal, other than that you would be just driving thru....IMHO stay in Niagara Falls, Canada somewhere with a fallsview so that you can see the lighted falls from your room. We always stay at Embassy Suites, asking for a room with a view! http://www.embassysuitesniagara.com/ As you say, get up early, have your complimenty made to order breakfast, and take the Maid of the Mist, you will love it!After crossing the bridge back into the States, go into Goat Island and take the Cave of the Winds tour: http://www.niagarafallslive.com/cave_of_the_winds.htm Actually, you can take the Maid of the Mist from Goat Island or from the Canadian side. You don't HAVE to stay overnight on the Canadian side but it is the only place you can have a fallsview room the US does not have one and the only place you can see the lighted falls. The Canadian side is so much better than the US side.

Forget the Kanc in NH, it is beautiful but definitely too far out of your way! I also don't think it is feasible to do Dennis to Southwest NH, Vermont, and then I-90 across to Niagara Falls in one day...you will be driving all day and completely spent.
If you want to do Niagara Falls, I would go from Dennis up to I-90 and simply drive West non-stop till you get to Buffalo and then up to Canada. Agree the best views are on the Canadian side and I also love Niagara-on-the-Lake but you need some time to explore the town and hit the wineries to make it worthwhile.
I hate to say it but I think your hopes are too ambitious. Pick just one thing between Cape Code and Ohio. If I had to pick just one, I think Niagara Falls has the most WOW factor. I am guessing all highway straight across I-90 and you can make Niagara Falls from Dennis in eight to nine hours. Get there in time for dinner, see the falls lit up at night, do a little sightseeing the next AM (perhaps go to Niagara-on-the-Lake if you don't care what time you get to Ohio).

Aw thanks for your honesty RLFox184- we've had a chat about it and think we definatley want to see Niagra Falls- as mentioned, i have been before years ago but my other half never has. WE only really want to see the falls lit up at night, do a couple of tourist things like maid of mist etc then head to niagr-on-the-lake for lunch as previously expected. We are not interested in wineries, we really just want to see niagra-on the lake and are happy to just stop by for lunch.
And i think we may travel to ohio via the Presque isle state park just to do the little 12mile penninsula park drive- dont worry we arent worried about what time we get to ohio (though i am hopeful we will arrive around 7-8pm...which i think is dooable as we plan to get up early for morning in niagra)
Im a little sad about my covered bridges though, i so wanted to see at least one
I think if i cant see a covered bridge, i would like to see the coast north of boston including salem...though i know some dont think its feasible....
Thanks!

Two covered bridges in Erie County PA. http://pacoveredbridges.com/erie_county_map.htm
There is a small lighthouse in Presque Isle State Park. The park superintendent lives on the ground floor.
