This service is geared more for locals that may need a car for a week. In that case it looks like it is worth it. For a day trip your suggestion of flying/renting makes more sense.
What I would do is to take the morning ferry to Oahu, rent a car and then fly back in the evening. You will save some cash, experience the ferry crossing, have more time on Oahu and save few $ in the process.
Ferry x 2 = $78
Car = ~$40
flight x 2 =$118
total = ~$240
Ferry x 2 both ways with a car = ~$300
Fly both ways/rent = ~$280
decisions, decisions...

oh and I'm not sure you noticed but a day trip on the ferry is not possible when doing Maui-Oahu run. The earliest crossing leaves at 11:15am and gets in at 2:15pm. the only same day return to Maui leaves at 3:15pm so you only have an hour. You would need to spend a night on Oahu.
But the latest flights from Oahu to Maui leave ~10-11pm so you would have about 6-7 hours of touring.
The same day ferry trip works the other way. You can leave at 6:30am get in at 10:15 and return to Oahu at 8pm and arrive at 11pm.
