Matzoh Ball Soup
1 chicken (pref. Kosher--seems to make a tastier soup, don't ask me why...the salt??)
Carrots (I use baby ones)
Celery (cut in big chunks)
Onions, 2-3 whole, peeled
Parsnip, peeled
Dill (optional--tie up in cheese cloth w/parsnip)
Put water in pot and add enough to just cover chicken. Throw in vegetables. Bring to boil and then simmer for a couple of hours w/lid on but cracked. Taste and if necessary throw in a little chicken boullion (sp?), salt and white pepper.
I always make it a day ahead so I can skim all the nasty fat off the top after it's cool.
I'm no expert in the matzoh ball dept. My MIL makes nice fluffy pretty ones so I hired her out for that job. Mine are fluffy but always look deformed. I just follow the recipe on the matzoh meal box, substituting selzer for the water. My stepmom says to use schmaltz (chicken fat) for the oil but I don't...
We still have some leftovers, come on over. I can't look at them anymore!

Shhhh, I am a Libra too, and I would like to sneak into Atlanta and surprise dear OWJ also...especially would love to surprise her regarding how much I will eat, hehe. Can I check a folding chair in with my check in luggage? :

Happy birthday (a couple of days ago?) I wished you a hb, but can't remember when exactly.
Scarlett, will you do a chocolate cake with white icing or white cake with chocolate icing. Chocolate/chocolate can be so chocolately!

Re matzoh balls, my NY cousin just told me she makes hers with seltzer too, to make them fluffy. My personal preference is the heavy kind my bubbie used to make -- they were as dense as a neutron star in the middle!
Re the soup, I think it's important to buy what we call a soup chicken or a stewing chicken (go to a kosher butcher, not the supermarket). That's a big, old bird and it makes a great rich broth.
We had a very fancy store-bought cake and fruit salad for dessert but I'm happy to say that the dessert that was the biggest hit was my whiskey cake.

LOL, Hi dear ones. I was just thinking (I do that once a week). If we suddenly no longer see our dear OWJ on Fodor's and discover her email address, phone no. etc. is no longer avaiable do you think we will be the cause of she and OWJ2 having gone into the governments protective witness program?
We better be good and play it real low key until next year..then we can plan our attack on their house next Rosh Hashanah.
But seriously, doesn't all that beautiful food sound so wonderful. I am sort of feeling envious of all of OWJ relatives and loved ones. What a beautiful meal they must have shared. along with the joy.

I am sitting here eating a wonderful kugel for breakfast!! It has cream cheese and sour cream and walnuts cherry pie filling in it. I figure fruit and dairy and nuts are appropriate for breakfast. Our brisket was out of this world.
