Gluten Free Barbeque in Austin

I'm headed to Austin for a short but sweet trip in July. I'm jonesing for some delicious barbeque but I'm allergic to wheat flour, which is often tossed in there behind the scenes to thicken the sauce. Anyone have any recommendations for delicious, gluten-free BBQ? Thanks a million.

In Austin, the good bbq doesn't come with sauce. It's all about the rub.

That said, there is nothing to beat Louie Mueller's brisket in Taylor. Just stay away from the white bread.

We loved the Salt Lick in Driftwood near Austin. You'd have to check with them regarding the gluten issue. Their brisket is delicious and I thought even better without the sauce. We liked Rudy's too - again check with them.

I'm looking at the ingredients on Rudy's BBQ Sause

The only one I can't be certain about is the one they call "spice blend", which includes "modified food starch"

Everything else listed appears to be non-gluten.

I've seen more barbeque shows on Food Network than I can count. I've read hundreds of barbeque recipes. Not once have I ever seen wheat flour added to a sauce.

Ah, the mysterious modified food starch. Could have flour, could not.

Logandog, of course not all BBQ is created equal, which was the reason for my post. After I went gluten free, I was shocked to learn how many fillers (particularly flour and corn starch) tend to get tossed in at restaurants and in grocery store products. Sauces, salad dressing, mashed potatoes. Restaurants tend to throw them in to expand the quantity of food and reduce the cost for other, more expensive ingredients. Commercially prepared sauces often include them for longer shelf life too. Food Network and legit BBQ recipes are not as likely to have you throw junk in your home cooked food.
