The big variable is traffic. The driving times could vary quite a bit, depending on the day of the week (weekday vs. weekend) and time of day (rush hour vs. non-rush hour). Use one hour as a very rough estimate of the time required to go from LAX or Beverly Hills to Anaheim or John Wayne airport in Santa Ana. Weekday rush hour traffic could double this time estimate.
AS to which airport is preferable, John Wayne is smaller and much easier to get into and out from.

Sixty minutes Anaheim-LAX is just about right, but it could be a little shorter (at 4 AM, 40 minute!) depending on where in Anaheim it is. General route: 5 North to the 91 West to the 605 North to the 105 West, exit Sepúlveda north into LAX.
Anaheim to SNA is much shorter-- 20 minutes if traffic cooperates. That route is: 5 South to 55 South, take John Wayne Airport exit.
There is a third option: Long Beach Airport (LGB), which is JetBlue's west coast "hub". There are multiple routes there, some completely on surface roads. The fastest would probably be: 5 south to 22 West, merges to 405 north, exit Lakewood north to LGB. Roughly 25 minutes. Small airport; from curb to gate can be as quick as five minutes, usually no more than 15. Long runway mean smooth no-"whoops!" takeoffs. Frankly, the JetBlue option makes LGB my choice.

Another option would be to take a luxury bus from L.A. or Anaheim to Las Vegas. Lux Bus Service <http://www.luxbusamerica.com/index.html> offers movies and a full galley with snacks & beverages. They just might cost less than flying.

One thing to consider is flight frequencies.
From LAX, Southwest flies to LAS about 14 times a day; similar on US/America West. TED, DL, NW and American Eagle adds a handful for over 30 dailies.
From SNA, you only get 6 each from WN and US/HP.
From LGB, you only get 2 flights from Jetblue a day.

I'm surprised at 50 minutes for travel time from Anaheim to LAX, but I do understand that I5 can be pretty bad. I can get from Seal Beach to gate 71A for the TED/United flight to LAS in 50 minutes or an hour, including parking and taking the shuttle to terminal 7.
I prefer using LAX because the fares are lower than SNA. Traveling midweek or returning on Saturday evening then I would probably go for jetBlue from LGB. But their weekend flights to Vegas on Friday and from Vegas on Sunday are not inexpensive. For Las Vegas USAir has a good schdule, good fares, they offer first class unlike United/TED, and the security lines to their gates seem shorter or at least less hassle than the security lines for the C and D gates. I've seen dirt cheap fares offered by Northwest and Delta from LAX.
Am at Caesars Palace at the moment heading back to LAX on USAir tomorrow.
