Tuna Noodle Casserole? Omigod. YUCK! My mom made that all the time growing up--hers had peas, tuna and whatever other scary combos she threw in there. I hated it and would just cry. Finally after weeks of fighting with me to eat that concoction (the rest of the family liked it), she gave in and let me have a bowl of cereal or a sandwich instead. I still get the heebeegeebees (sp?) when I think about TNC though I could be persuaded to travel down to Naples and try Patrick's gourmet version

One of my favorites that can be made either with or without chicken is, essentially, layers of corn tortillas (toast or fry for flavor, but crispness will disappear), in between layers of a mixture of chopped spinach (easiest to thaw and drain frozen), mushrooms, black beans, and chopped green chilis mixed into sour cream (non-fat for diet; regular for taste). Season with lime juice, cilantro, chili powder, cumin, salt and garlic to taste.

I'm up for anything, but need to go to the store in a couple of hours. I decided last night not to take my "usual" and wanted something more summery - or at least a change.
If traffic isn't bad going back through Atlanta, my dessert will be a caramel cake from Rhodes Bakery. Yummy!

Please come back and add a can of creme of something (anything) soup to add to your carb casserole!
I use two cans of creme of mushroom soup, two cans peas, two large cans tuna, one bag egg noodles, one soup can of milk, mix it up and bake covered in shredded cheddar cheese.
Every Friday during lent alternated with Salmon patties.
Oh the horrors of the meatless Fridays in the south in the seventies during Lent.

Gooood morning~
I hate to admit this but I have considered frying a peanut butter/banana sandwich, just to see if it could be better
I am on a panini kick, who knows, it could be all the rage!
Not being CAtholic, we never had 'meatless' Fridays but having a non-cooking mother meant that we had plenty of 'eatless' dinners LOL
Thank goodness for dad and his ability to throw together a good sandwich ( fried bologna & cheese comes to mind) on that soft white bread..Sunshine?

bamakelly, the corn casserole was AWESOME! Thank you, Scarlett, for topping the thread.
I took a peach cobbler too because I was running late - in case I missed the main serving of the potluck. Both were good.
But, I'm dying in this middle GA heat. It's in the mid 90's - and I left 70 degree weather this morning. I'm headed back to the mountains in the morning. One more load of furntiture to switch out between the two places and I think I'm finally settled.

I do not get all out of whack about your "non-travel post" (in fact, every now & then I think that your kind of post is what this great site is all about...people connecting). I thought that you shd know that I am still "ouching" from your stinging reply to my "MJ" post after the verdict... You really flamed me!!!! Mine was not "travel related" admittedly....but neither is yours. Wish I had a recipe for you! (For a while I thought that you might be Gekko!

I didn't post to the MJ thread. I did reply to your post when you were concerned about possibly being banned from the board. If I remember correctly, a thread had been pulled and you started a new one challenging the editors. I may not remember the details correctly, but I do remember thinking you were playing with fire.
I did post an apology to the editors for this thread not being travel specific, but Scarlett helped me out by providing a link to the Traveling Recipes thread. Hopefully, the editors (and you) won't feel that a recipe request is comparable to the MJ thread.
In any case, glad you are still on the board.

Anyway, bottom line is that my original intent was to hear what my "Fodor's Friends" had to say about the MJ verdict. So, it seems that the "travel related" rule here has some latitude. And, that's great! As long as a post is not "controversial" or "rude" the poster will not be "disqualified" & the thread will not be deleted.

I have made this a dozen times and it's easy, cheap, yummy, and makes a ton...I usually use a disposible deep, round casserole baking dish.
Corn Casserole
1/2 cup melted butter
2 beaten eggs
1 box (8.5 oz) cornbread mix
1 can creamed corn (15 oz)
1 can corn (drained) (15 oz)
1 cup sour cream
bake 350 degrees in 9 x 9 lightly greased pan for at least 45 min, if you use a very deep dish, may take over 60 min-90 min.
