Statia or bamakelly, can you top the corn casserole recipe thread -

or anyone else - what's a good, tasty, easy veggie recipe to take to a pot-luck tomorrow?

I'm going to take bonniebroad's Onion Dip and bamakelly's corn casserole.

I'll be traveling to the pot-luck tomorrow in style with great dishes in hand. Thanks again, Scarlett.

Boil a bag of egg noodles/dumpling noodles. Before they get "mushy" drain them and put them into a large greased baking pan or dish along with a frozen bag of mixed vegetables mixed in. Put it into the oven at a low temp for an hour. Then put a bag of crushed potato chips or corn flakes on top of the dish and bake again until the top is golden brown and crunchy.

Its easy and cheap. don't forget some salt. Let me know how it turned out.

jorr, please tell me you're kidding. That sounds like the most horridly bland dish I've ever heard of. Are you really serious?

Actually, if you toss in a can of tuna, it sounds like a weekly menu item as I was growing up. Crushed saltine crackers on top though.

Did anyone else suffer through "tuna noodle casserole" on a regular basis?

How about Salmon Croquettes?

I couldn't eat tuna for years because of my moms tuna casseroles :-&

Wait a minute. Jorr, did you leave out "one can of Campbell's cream of mushroom soup"? Now it's starting to bring back early childhood memories of church and cubscout suppers. Every good old midwestern casserole requires a can of soup!

Poor, starrsville and Scarlett. I may love LeBernardin, but nothing beats a great old tuna noodle casserole!! Yum. I've been known to do them with fresh tuna, porcini mushrooms, and papparedelle. But to be honest, nothing beats the one made with Mueller's noodles, Campbell's mushroom soup, and canned Starkist.

Patrick, my mom cooked some macaroni, throw a can of tuna in and mixed it all around with mayonaise..while the noodles were still hot. UGH!
I might have mentioned this before, but my mother could not cook. I am lucky we had a lady who did it for us most of the time or I would have lived on peanut butter and banana sandwiches LOL

Well, Patrick, you can't make a casserole in the south without a can of cream-of-something soup!

Anyone ever see one of Scarlett Johansson's early movies, Manny and Lo? Two sisters kidnap Mary Kay Place and MKP makes a Jorr Casserole from the limited makings in the cabin they are hiding in.

Patrick, you can cook me you version of Tuna Noodle Casserole ANYTIME!

My mom did make Salmon Croquettes (or Salmon Pattys) recently and I enjoyed them more now than I did growing up. Maybe I should try TNC again too!

Our school cook adds cheddar cheese, frozen peas, onion, and chopped carrots to her tuna noodle casserole and it's really very good. If she could put chips on top it would be perfect.

For my not eating fish or fowl friends, A layer a slice of eggplant, tomato, onion, zuccini in a basted dish(butter)
and sprinkle cheese on top , maybe Parmesan.

Frozen Corn, thawed. Add: chopped green pepper, red onion, grape tomatoes, black beans, lime juice. serve chilled. Soooooooooooo good. Serve left overs on a bed of shredded lettuce with grilled chicken.
