I'd suggest:
Magic Kingdom, that will consume at least one day, and it will be perfect for your 7 year old.
MGM Studios, you can do that on a day and it will be more exciting for your 12 and 10 year olds.
If you want to do a water park, I'd recommend either Blizzard Beach or Typhoon Lagoon. Both are quite nice. If you'd rather do a park, I'd go to Animal Kingdom. Epcot *may* be a bit tiring and even boring for your kids.

To tell the truth, I didn't enjoy MGM all that much. Oh, it was a great park, don't get me wrong, but not the highlight of our last trip. (Though a trip there just to see the tower of terror is another story)
I agree with the Magic Kingdom however, just be sure to take the ferry across the lagoon the first time, and not the monorail... much more majestic!
My personal favorite was Epcot. Your kids will love Inovations, and all the other activities to do there, and most of the buildings are air-conditioned, a definite plus for any summer day! And the world showcase cannot be missed!
As for water parks, I haven't been to any of the Disney ones, but Blizzard Beach is among the top ten parks in the country!

Interesting that you commented how much you enjoyed EPCOT, Shelby.
I was just thinking how I wasn't sure how EPCOT survives in the face of all its competition. I found it so dull and like time was dragging there.
Maybe I'm one of the few.

EPCOT is the favorite of my teenage son & myself, we spend probably 40% of a typical vacation there. We make a point of staying at the Beach Club Hotel so that we are only a 5 minute walk away from EPCOT.
One of our favorite features is the broad range of diverse, live entertainment at EPCOT: acrobats, mimes, musical groups, comedy troupes, etc. http://pages.prodigy.net/stevesoares has current listings on live entertainment through out WDW.
It just shows there are wide differences in people's opinions & perceptions. One person's "snooze" is another's dream. For that reason, Ann, research the World using http://www.wdwig.com, or http://www.wdwinfo.com, and make up your own mind.

We love Epcot. My husband and I particularly like World Showcase, but enjoy all the exhibits. We took our 19 month old daughter there who really enjoyed the Tapestry of Nations parade and the dinosaurs in Ellen's Energy Adventure. Even Spaceship Earth held her attention. Innoventions has a lot of hands-on exhibits for the kids. As Tom mentioned, there is a wide range of entertainment there. Personally, I would do Magic Kingdom, of course, Blizzard Beach and either Animal Kingdom or Epcot. Give your children plenty of information on both and let them decide. I would skip MGM which I find boring, but that is my personal bias. The websites Tom mentioned are excellent sources of info.

Assumming that Magic Kingdom is one of your picks save it for last. We were given this advice and it was good advice. If you do Magic Kingdom first, your kids might not appreciate EPCOT/MGM as much - both which are terrific and should not be missed. There are 2 parts to EPCOT. Do the Land and Sea, etc. but skip the country pavillions which probably would bore your kids and take alot of time. Instead,you might be able to fit in Tyhoon Lagoon water park.
