Zion is close, but Bryce and N. Rim are going to involve driving 300 miles round trip each! I would plan on leaving early each day to make the most of it!
Just a few miles north of St. George is Snow Canyon State Park and worth some time.
A trip to Cedar Breaks and the Kolob Section of Zion National Park just off I-15 would be a 150 miles round trip.
If you don't mind driving another 300 miles again you could go to Lake Powell.
Also near by is Coral Pink Sand Dunes State Park and Pipe Springs State Park in AZ.
July will be hot. Cedar Breaks and Bryce will be your cooler spots.
