Choosing an airline
I am looking to take my first trip overseas to Scotland and Germany...hopefully in October. Any recommendations on what airline to fly? Also, what days/times of day to travel will get me the best rates?

When I am first starting to plan a trip I just go to Expedia.com & just put in some sample dates and play around with it. That will pull up a list showing which carriers fly from your home airport to Scotland or Germany and a general idea of prices.
Then I switch over and go to the airline's own website to finalize and purchase tickets.

Also try www.kayak.com (although it will now no longer include AA)
If you want some specific comments, you really need to tell us where you're flying from, and whether you're considering an open jaw ticket - eg, flying into Edinburg, flying out of Munich.
In general, mid-week gets you the best fares.

Here is what I recommend:
go to www.itasoftware.com and use the "month-long view" feature.
You'll see all the prices between your two points for every day in the selected period.
