California Itinerary over 18 days

You actually have only 16 days on the ground. The other two days are your travel days.
With slightly more than two weeks, that's not really all that much time. Might I suggest that your car portion be confined to California? You can fly to Vegas from SF/LA/SD, rent a car there, go to the Grand Canyon, return to Las Vegas, return car, fly to SF/LA/SD.
One other note, San Diego is much, much better for little kids than that entire Disneyland +other theme parks in Anaheim area.
Oh, and if the road to Yosemite is closed, you can skip Yosemite. If you drive along the California coast you'll be getting plenty of scenic beauty as well as plenty of places to stop and enjoy the area, such as at Point Lobos. Driving north to south is better along the coastal route.

So far no one has pointed out that getting from Yosemite to your other destinations in California is going to take several hours, at least. We allow 4 hours to get to San Francisco Bay. If Tioga Pass is closed, your access to Las Vegas is limited to heading west into the Central Valley of California, then south through a pretty boring landscape to just north of Los Angeles and then back east to get to LV. Or continuing south to LA and San Diego, and putting LV off till later in the trip. You definitely need to fly into San Francisco and out of someplace in the south.
If the scenic drive from San Francisco to Los Angeles is more appealing, this whole itinerary would have to be reworked if you also want to see Yosemite.
