The Angry Trout in Grand Marais, MN (on the north shore of Lake Superior close to the Canadian border).
Not strictly vegetarian, but organic with many vegetarian/fish options. Best salad I've ever had in my life. And the restaurant is right on the lake and decorated with art from local artists - a very cool place.

Kalachandji's Restaurant in Dallas -- it's in a Hare Krisna temple in a older residential part of town. Very cool. They serve a buffet, which soup, salad bar, bread, appetizers, one entree, and three to four vegetable side dishes. Beverages include a really good herbal iced tea and they also offer a choice of desserts when you are finished. I wish I could remember what I ate, but it was all excellent. I love going there. As far as desserts, Cosmic Cafe in Dallas had the absolute best rice pudding I've ever tasted.

Wrenkh in Vienna.
Had a salad of tiny mixed veggies and tender lettuce greens, then a timbale-type dish of cracked grains. Accompanied that with a glass of wine from a vineyard just outside Vienna - the wine smelled of violets and tar....it was a good meal.

Candle 79 in NYC--good food at reasonable prices. Green's is great but fairly expensive for a vetarian restaurant. I figure restaurant that charges alot should make great food, so my idea of good restaurants are those that make great food with moderate prices.
