Aspen restaurants questions and advice about COVID, staffing
I'm booked for a group ski trip to Aspen the first week in March 2022 and see that restaurants are requesting a proof of vaccination which I'm glad to hear. I'm wondering, however, if there is a serious shortage of staff like there is in other parts of the country and is it seriously impacting service?
The second part of the question is do we need to make reservations well in advance and any recommendations? thanks

yes, of course there is (a shortage of staff), I bet there is in almost every city in the US. I haven't been there recently so can't comment on your service question. I'm going later in March than you.
I'm not a foodie and don't dine at high end places, so take that into account. I just want a decent meal. My favorite places have closed due to Covid, unfortunately, same story as a lot of cities. Aspen is doing a lot of high level buyouts/renovation, also, which bothers me as I've been going there about 40 years and it's just not the same. ALl the places I would make a reservation for are now closed.
This is is just a cheaper Mexican place but I really like it.

I like Mexican food a lot and also go to Mi Chola but I think Su Casa is better. Mi Chola is a little "nicer" inside and better for bar/drinks (Su Casa is very popular with families).
Mi Chola
Both were really popular pre-Covid and seem to take reservations, so I would make them if you want to go there. I never used to.
For kind of high end Italian, I like Acquolina also

I actually like Red Onion, also, which is just kind of a dive bar.
Where did you get this info about restaurants requiring vaccinations, none of those say anything about that? From what I've read, only 3 small places have but that was last month (and they weren't that wellknown to me, one inside LIttle Nell did). I know the ski resorts do for indoor dining on the mountain, though.

The Red Onion is an Aspen mainstay. I wouldn't call it a dive bar, though.
It's a good place to get a reasonably-priced meal in over-priced Aspen.
We also like:
Mezzaluna https://mezzalunaaspen.com
The Wild Fig https://www.thewildfig.com
The fabulous Hotel Jerome has its J-bar and also other dining options https://aubergeresorts.com/hoteljerome/dine/
Steakhouse 316 https://www.steakhouse316.com/aspen/
I'm sorry to hear that L'Hostaria is closed permanently. That's a loss. https://www.hostaria.com/closure-photos
Definitely make reservations for dinners

The places I named are on the higher end of the $$$ scale; reliable places for special dinners that we count on.
There is an abundance of restaurants in Aspen, but be prepared for the prices.
i forget its name, and maybe Christina already mentioned it, but the Mexican restaurant on a corner in downtown Aspen, up the street from the Jerome, is good and not too expensive.
If you have a condo, there’s a good grocery market in the middle of downtown Aspen, and a nice little deli and liquor store next to it.
Aspen is awesome. Enjoy yourselves.
