At the risk of sounding very ignorant is New Mexican cuisine always spicy hot?

You can and should ask for the chile sauce on the side. It comes in red or green. Sometimes one is hotter than the other; but it will always vary.

Food isn't necessarily spicy hot, nor spicy. It is flavorful. It is not jalapenos pepper which are just hot.
