Good idea about Quebec City. French is widely spoken and it has European-style architecture (declared a World Heritage Site by UNESCO). There are buildings, houses and churches dating from the 1600s. The Old Quebec Historic District is a walking area and has plenty of shops, European-style eateries, sidewalk cafes and parks. Towering over the old town is the Chateau Frontenac, a grand hotel dating from 1893.Fortified stone walls surround the old town. Eat rabbit at a French classic bistro. Eat yummy crepes. Grab a croissant or baguette at a French bakery. Would need passports or enhanced driver's licenses.

Is Mom aware of this trip that you are planning? If so, let her choose. My family did that for me on a milestone birthday. I chose the location and three or four things I wanted to do while there. It was a fantastic celebration!

The Biltmore in Asheville would work. Maybe stay at The Omni Grove Park Inn.

The trees should be pretty and you can eat at The Biltmore as a break from being on feet so much. The grounds are lovely.

I like a trip where you stay one place, unpack and do activities from there.

I live in Mississippi and it may not seem like this is a place on a must visit and I get that! If she loves Elvis, Graceland is always an option but, Elvis was born and raised in Mississippi. Its humbling to see where he was born vs where he rose to. Other than the birthplace of Elvis there is a lot of history here! Battlefields, Jaz, etc...
