Here's a Disney lodging option with a free breakfast room, although I haven't stayed therehttps://www.choicehotels.com/california/anaheim/quality-inn-hotels/cab70?mc=llgoxxpx If children napping is still a thing then being really close to Disney is a plus. Getting a 2-day pass covering both Disney parks makes sense.
Trying not to impose my values on you, but I have found that spending less $ leads to a more memorable trip. Some free or nearly free things to do: drive the Orange County coast from Newport Beach to Dana Point stopping at pull outs along the way. A West LA day with Hollywood, Griffith Observatory, and Santa Monica/Venice. Those are basically free days and good days. It's potentially bad traffic to/from Anaheim but check out the HOV lanes, I think the Harbor Freeway has them, and maybe they have got them built on I-5 by now.

I am having a super hard time posting links, so here is some stuff without the hyperlinks. Have you looked at a guidebook? Nobody covers the USA like Moon Publications, I see the Melbourne library has 2 titles, check them out and if the style works for you buy the exact titles you need.

Noting that Moon is getting a bit trippy, https://www.moon.com/travel/national-parks/national-park-horoscope/ and as a Leo the recommendation is definitely wrong for me.
For general info, these apartment-type hotel chains all offer a free breakfast room, and free dinner some days a week all with free booze:
Staybridge Suites, dinner MTW
Homewood Suites, dinner MTWTh
Residence Inn, evening snack MTW
Embassy Suites, evening snack I think every day
The Staybridge in Vegas is not within walking distance of a desirable part of the Strip (excellent hotel for children, great pool) , but the Homewood Suites is.

Gosh this is a goofy forum, reposting above hopefully without the rectangular advertising bubble covering the text. For some reason I can't edit that post.
