We still have our earlier iPhones (unlocked) which were never returned when we upgraded to our current phones. Are we able to add sims to the earlier phones to use for travel?

We've used sims in the past on trips with our current phones, but had a real problem when we returned from Spain and are now very reluctant to use phones we still need. If we can use the older phones, that would be great.

If your phones are unlocked and work on the GSM standard you'll have no problems. If they are locked your phone company can unlock them.They can also tell you if the are GSM or CDMA. If the latter, you're out of luck for Europe though.

Yes. I always use my last phone for this. I travel internationally 1-2 times per month and I always buy a SIM card for date when I arrive at the airport. My main advice is try to avoid buying from vending machines (Japan) or at a shop where they do not activate the card for you. Some countries require several steps to activate the SIM so it is helpful to have someone there to help who does this all day.
