There are countless Indian cooking demonstrations on YouTube already. Get familiar with the dishes and commonly used spices so that you can get more out of any cooking classes you take.
There is a great variation of how each dish is prepared - whether by geographic region, city, or family. No matter who you learn from, the next person will not make the same dish the same way.
With so few days in India as it is, it might be a waste to use one of the days for cooking.

Hi Kathie and all - we regrouped last night and adjusted our itenery! Sliced it in half and feel much more comfortable! Your advice is very valuable! Our 10 days will be spent in the Golden Circle and up to Varanasi!!

Amalia, Try Delhi B&B for the cooking lessons. We stayed with these folks, as did my daughter when she was traveling in India by herself, and they were wonderful:

You don't have to stay with them to take the lessons.
