When are you going? Do you want the most direct route or would you like to wander a bit?
Not far off the I-10 path you could visit Tucson, Saguaro NP and the neat museum or go to Kitt Peak, in AZ. In New Mexico, there is Gila Cliff Dwellings, White Sands NP and Carlsbad Caverns.
If you are willing to wander north and travel on I- 40 there are tons of things not too fare off to see like Grand Canyon, Canyon de Chelley, Meteor Crater, Petrified Forest/Painted Desert, Inscription Rock/elMorro, Acoma Pueblo, Albuquerque, etc.
If you wander up to I - 70 we could add many more sites.

Please define a "must see."
Urban? Rural? Historic? Scenic? Educational? Lots of amusements? Lots of quiet? Upscale shops? Bargain shops? NO shops? Beach? Mountain? Forests?
There are lots of "must see" places along the way. Problem is, a place *I* consider nice may be horrendous to you, and vice-versa. So, unless and until we get an idea of what YOU are looking for, neither I nor anybody else can tell where YOU will find what YOU are looking for. All that will happen is people telling you what THEY like.
Does it surprise anyone that I was able to cut and paste, almost word for word, what I said only five minutes ago?
I should add that it would help if you mentioned if anyone is coming along with you. A great place for adults could end up being a horrible place for kids, and vice-versa.
