I think that things got a little off base here:
"I absolutely love old places/ ruins, cool little towns, I'm interested in seeing some cenotes and I'm up for any kind of adventure. I wouldn't mind spending a few hours on some awesome beach (read: the non-touristy beaches)...I dislike being around the touristy crowds..."
PDC is exactly what the OP does NOT want, from that description.
Also, with only 2 days, waiting on collectivos for transportation will be a waste of the OP's limited time. Although I wouldn't send someone to Vallodolid as a base (just a personal preference), it makes sense in the context.

There are really only two hotels near the airport, the Courtyard by Marriott and the Comfort Inn. Not sure if you are aware but Puerto Morelos is only 20 minute drive from the airport, so if you did decide to stay there, pick up your car and drive to PM, not sure if they have a rental car place in PM.

Thank you all for your input- I am considering every single suggestion- googling everything you all are advising me here. I sincerely appreciate the comments, encouragement.. even the warnings- I will heed them. I will leave some room for flexibility. I've come a long ways from thinking I will just go to Isle Mujeres and check out Cancun- ugh... ha! I'm liking what this trip is shaping up to be- so muchas gracias!

I would recommend visit Coba is one of my favorite ruins in Quintana Roo and you can climb it! All the island around Isla Contoy, Cozumel, Isla mujeres, of course Holbox its worth to visit. Tulum is the best for the beach, great vibes and good quality! You can check http://goroo.mx for some more places to visit, there are too many things here to do and to see
