TC- I talked with my fiance and we discussed what we would like from our honeymoon. As far as activities, we are interested in kayaking, renting bicycles, seeing some nature and wildlife (maybe a hike?), bars and nightlife. These things would be a plus but not necessary: ruins, paddle boarding, sailboat rides.
As far as resorts go, we like the idea of all inclusive because of the ease but I think I would prefer to not do all inclusive so we could explore some different restaurants and bars. Fiancé doesn't want to rent a condo or a house because he would prefer a more social atmosphere where we could potentially meet and hang out with other honeymooners. That said, I guess we aren't looking for secluded. We would be open to either a regular resort near good dining options or an all inclusive if it had enough restaurants and variety for food I guess. We definitely want to be right on the water on a good beach. And we would like it to also have a pool. Swim up bar is a plus.
We don't mind traveling farther than where we've been looking, however money could be an issue due to an expensive wedding. We are still located on the west coast, in Portland, Oregon.

For a non-AI hotel right on the beach with good snorkeling and a pool (no swim-up aka pee-up bar though) Hotel Akumal Caribe is really nice, plenty of restaurants and shops nearby. They just recently remodeled the rooms. Has AC, safe, bottled water, coffee maker, etc.
Don't stay AI, but nearby Catalonia Royal Tulum is on a good beach, AO, no reservations for dinner, no dress code.

Jamie99, both of those look nice. Definitely completely different options. I'm not really sure if going all inclusive will be saving money or not. I don't really know expensive local restaurants and bars would be. Catalonia seems like a less expensive AI? So that is a plus. From what I've looked up if we are really set on going to an adult only resort we would probably be going all inclusive. I haven't really seen any regular adult only resorts. Also, Pee up bar... lol.

Still on my Mexico band wagon here (lol) I just think the entire Caribbean coast of Mexico offers way more adults-only, all-inclusives, beachfront, swim-up-bar, kind of resorts that you are going to find in places like Belize or Roatan.

We've been really going back and forth on the AI front. I think AI will be expensive and I would hate to be stuck eating mediocre food. But the convenience is nice and the fun atmosphere with other couples who are celebrating. They just seem so expensive and we would like to go for 10 days or 2 weeks if we could swing it but with the AI prices maybe we wouldn't be able to.

Only stayed AI once at the ABR shortly after losing my husband. They are currently remodeling this hotel but it is not AO.

You can go to Cozumel. It is one of the safest places in the world and largest islands in Mexico. There you can find great snorkeling, nice beaches and good foods. Cozumel Island is most famous for scuba diving and snorkeling. We travel to Cozumel many times and it is a very fun, warm and safest places to go for vacation.
