A few years ago there was very little choice; I understand some new hotels have been built, but am not familiar with any of them, as it has been a couple of years since we were in LIberia last.
That said, having been to Liberia many times, I'd rather have an extra day at the beach! I don't know where your travels in Guanacaste are taking you, but Playa Hermosa area is an interesting place to visit (Ginger is a pretty cool bocas restaurant). It is only about 30 min. from Liberia.

Not sure which direction you'll be coming from, but I've heard the waterfall near Bagaces is gorgeous. Do a google search for it.
We spent our first night in the Best Western Las Espuelas outside of Liberia. It was a good place to stay since we were driving to Monteverde the next morning.
There is a new Hilton Garden Inn near the airport.
We had friends in Liberia, attended the spring fiesta and tope with them, dancers and bands in the plaza, Tico bullfight, dinners out in restaurants. If not for friends and the fiesta, I don't think I would bother with Liberia itself.

We stayed at Boyeros Hotel. It was ok. It had 3 swimming pools, air conditioning at was across from a large shopping center. Liberia was a total madhouse. We were driving and cars were going every which way.
