I have been to Puerto Vallarta 30+ times, staying between 2-4/weeks each trip. So a total time in Old Town of a year or two, over the past three decades. The only reason my information is not totally current is because I did not travel during the Covid Pandemic. Pretty sure I know more than someone who has only been to PV once.
As in any good travel forum people will take away what they can use from the various suggestions and ideas shared. And ignore those they do not find helpful, applicable, or appropriate for themselves. With the title "PV ideas" hopefully others in the future will read the thread. It's not only about the OP.

I hope you come up with something more interesting than Zumba.
Not that it applies to this post but since you brought it up. Thru Zumba (a dance fitness program, very popular in Mexico) I have met all kinds of people, locals, expats, long and short term visitors. I've danced each morning at 8am in Old Town, for a special event in the square in Pitillal on a Friday night when a teacher from Mexico City came in with his back-up dancers (I'd say 200 dancer and 200 observers in the bleachers and hanging from their balconies). I've danced on the cliffs of south-shore in the early morning. One fund raiser for education in an empaty field in the Hotel Zone (near Puerta de Luna) where they were trying to get 500 dancers in and all the studios in the area (kids, karate, zumba groups) were leading the event from the stage, under a full moon... until it started raining.
Hardly boring, rather a great way to truly join into local community as a visitor. (really shouldn't talk about what you don't know anything about.)

I enjoyed the hike from Boca de Tomatlán to Playa Las Ánimas. It follows the coast, we saw baby manta rays frolicking in the surf, and a large pack of coatimundi foraging in the forest. There are other trails on All Trails that might interest you.
I also enjoyed spending a weekend in Sayulita, nearby. It's a little surf town, or at least was when I was there. There were stand-up paddle boards to rent if there's no surf (or if you don't surf).
Yelapa used to be a really nice escape, though I think it's been "discovered" and might be more trendy than it was fifteen years ago.
Tequila would be a long day trip - four hours driving, I think - but if you're ok renting a car and spending the night it is a beautiful little town.
If you're comfortable with LGBTQ+, or identify as such, then a day cruise with Diana Boat Tours is super fun. I wouldn't recommend the nighttime gay cruises for a non-gay; they tend to be a bit more raunchy and wild - at least from what I've heard.
