First-timer to Belize -- what to expect in December?

It doesn't sound like Ambergris is what you're looking for, at least not for this trip. The town of San Pedro is busy, too many golf carts, lots of bicycles, lots of people. It's still far from being a city, the business only lasts a couple of blocks.
I like towns (not cities) and several dining options when I travel.
Other than a couple of nights at jungle lodges (Katie, I've finally convinced my husband that Chan Chich would be worth the money), I want to be walking distance to town.

You know, Ambergris actualy sounds marvellous as a place to keep on my list of relaxing destinations, it's just not the best fit for this trip, I think. I used to always want to see towns/cities on vacation, then the pendulum swung toward the wilderness side of things. I'm sure it will swing back at some point, so it's good to have something in mind that I can look at when that happens.
Katie, I actually looked at the IE Lighthouse Reef trips first; they just don't work quite as well for me, timing-wise (they depart over the holidays or going into next year).
I think things are starting to come together; it's just a matter of confirming availability with all the right properties and operators.
Current plan, assuming confirmations from the people involved:
Fly into Belize City on November 29th or 30th, transfer to San Ignacio or (ideally) Flores, Guatemala.
Nov. 30th: Yaxha (overnight in Flores) -- skip Yaxha if I don't fly in until the 30th
December 1st: Tikal and transfer back to San Ignacio (overnight in San Ignacio)
December 2nd: ATM and transfer back to Belize City to meet with Island Expeditions group (overnight Belize City)
December 3rd: Cave tubing in "River of Caves" region (overnight Belize City)
December 4th-9th: Glover's Reef

I was in Belize last November and in the first week of January and it was beautiful both times -- water temps were comfortable, bright sun but not too humid. I've gone to Cozumel a couple of times in December and it's not South enough, was cold on land and I was freezing in the water with a wetsuit.
I'd suggest Caye Caulker over Ambergris and Glover's. It's a nice balance of some services and great eating options but doesn't feel touristy.
