I did a similar trip in college when I was 20... but did 7 cities, 4 countries in 3 weeks. In my mind, I needed to check everything I possibly could off my list and spent no more than 3 nights in any given place. Don't get me wrong - the trip was amazing - but I'd never do that again. We (my sister and I) did it all with a backpack for under $5k. My point is that it can be done - but you may enjoy yourselves more cutting it down to one country.

I'd also recommend going in the off-season if at all possible. I think you'll find lower airfare (I saw $600 RT this past March) and better accomodations for lower prices (definitely under $120USD/night) if you can go 2 or 3 months earlier. I'd also recommend renting apartments (vrbo.com, venere.com, sleepinitaly.com) then you can go to a grocery store and pick up essentials to cover breakfast and some lunches.

Are you open to hostels? I stayed at Archi Rossi in Florence and loved it - free breakfast, free walking tours, and I was able to book a "private" room for 2 with shared bathroom (bring shower shoes) for around $60USD/night. Bare bones but clean, cheap and safe. Best of luck!! I'm sure you'll get the bug to come back no matter what you decide!
