The Galleria Borghese won't take you 2-3 hours unless you really want to be there for that long; Probably 1-1.5 hrs. The major attraction at the gallery is the sculptures on the lower floor, and I would focus on the followings: Bernini's "Apollo and Daphne", "Rape of Proserpina", and "David", and Canova's "Pauline Borghese as Venus Victrix". Depending on your time and how much you like paintings, I think you can either skip the paintings upstairs or at give them a quick look, especially the gallery's most famous painting: Titian's "Sacred and Profane Love".
I'm not sure how many people fly Ryan air and at 6 in the morning. I had a 9:45 AM American Airline flight out of CPO, and the line was quite long to get through the first of two security checkpoints at the airport. I think I got to the airport a bit after 8 using a shuttle at the Termini and then had to take a shuttle to get to my terminal (Your taxi should drop you off at your correct terminal though). I made it to the main boarding gate with about 30 minutes to spare. I think AA was the only one that had a long line that day, so it really depends on how many people will be flying out with you on your same airline. I think if you can get to the CPO by 5:30 then it'll be enough, but definitely get going at 5.

I've used them a couple of times as have many others here usually for the FCO airport but the prices are the same for Ciampino airport.

You should be at CIA about two hours before your Ryanair flight, around 4.45 am or 5 am at the very latest. So around 4 am pickup should be fine, as there will be little traffic then and the journey should only take 30 min or so.

Please, this is the worst travel advice anyone can adhere to in Italy. There isn't an Italian airline employee in the entire country who shows up two hours before the first flight of the day.
In my vast experience, if your flight is 6 AM in Italy, consider yourself lucky if the counter agents show up by 5:15, even for international flights. Watching this early morning scene, one might think they'll never get everyone aboard in time, but they do. And for those customers who got there 2-hours before, they just stand around, yawning and waiting, mostly in disbelief.
