If you're going out to Connemara (Cong, etc.) Galway would be a good central base--but also easily a stop on your way to Connemara. I think I would opt for Ennis or Doolin.
But, having lived in Galway, it has some fun restaurants and great pubs. The Cathedral is fairly new and to my mind not very interesting--lots of local marble.
Try to do the drive around the north part of the Burren, which I find more interesting than the Cliffs of Moher, but very much a personal choice as most everyone loves the cliffs, which are worth seeing, hopefully for you on a sunny day.
If you stop in Ballyvaughan, there's a wonderful pub just as you enter or leave BV from the Burren road--I think Monk's Pub. Best chowders ever.
