I doubt there are more than a tiny percentage of American tourists using the Michelin Red Guide or Le Petit Futé or Hachette or Cadogan or other similar guidebooks for restaurant choices, so I disagree that guidebooks are a sure way to end up in a tourist restaurant. If you're reading Rick Steves, well sure, but who would want restaurant recommendations from him anyway?

I also found Le Petit Bistro in Michelin, and La Table du Terroir as well as other great Dordogne restos in Cadogan.

If one can bus kids to school, truck vegetables to market, go boating on a lake, bicycling around town, motorcycling down the highway or motor across country, why can't one train to Strasbourg?

the real trouble with "to train" is it means something different than "to take a train"

Not contextually, although I would discourage the former expression as a substitute for the latter.
