No set day, week or month. It just depends on when they get it together. Sign up for their email newsletter and you'll be notified a couple of months ahead of time when they release their deeply-discounted promo fares. I also encourage you to keep tabs on their webiste for any updates that don't get into the newsletter in a timelly fashion.

The remainder of their timetables should be released any day now, probably no later than January. Now that Olympic Air has merged with Aegean Airlines you can see their timetables on both company's websites. Each flight has a little logo to identify the airline. I've always found the Aegean website more user-friendly, so would use that one first.
In my experience the Public Service Obligation (PSO) subsidised route timetables are released later than main routes such as Athens - Santorini, etc. Some years, when bids for contracts are tendered, timetables are delayed. Olympic Air serves 17 PSO routes under contract with the EU and Greek government. These are loss-making routes, mainly to islands such as Naxos, Paros, Milos, etc.
