What would your pref be for July-August?

What would your pref be for July-August?
If you were going to Europe in late July to mid August for about a week to 10 days, which of these places would you choose and why?
Northern France to include Mont St Michel,
Northern Spain to include San Sebastion,
Northern Italy - Lakes District?
We love all three countries, and those are three areas that we have not been. We like visiting a cathedral or museum, but for this trip, I think we are mostly looking for lovely places to relax, do some walking, sitting out and eating in beautiful or lively settings. We like also to rent a car and just meander a couple of hours to smaller towns, etc.
To give you a better idea of what we would like, the AC would be perfect because there is just enough to do without getting bored, yet you can stay in one place and not move around. However, it is a bit hot and crowded in August, plus we would like someplace new.
We are considering Crete too, but think it might also be too hot then.
Provence?
The CT?
Open to any other suggestions, but do not want Ireland, Germany or England. Nothing wrong with those places, but again, we want someplace we have not been.
If we are able to make this trip, it will be last minute, but I am good with research and we have traveled a lot that way, so I am not concerned with hotels and lodging.

Wow! Two responses already from two posters I respect a lot, and you both give the same opinion. I was leaning more towards San Sebastion just because we keep going to Italy and I thought we should give more attention to some other places.
Bob, I've read your trip reports and looked at your photos. All your details will be helpful.
StCirq, didn't we meet at a GTG in DC? I know you have or had a house in France, so if you say Italian Lakes, you must have good reasons.

Well, I would go to San Sebastian.
"San Sebastian-Donostia, the historic seaside Basque resort known for its three beautiful beaches, tends to be a little more laid back and relaxed throughout the year, even during its major jazz festival in July and International Film Festival in September. August is busy, the beaches crowded, but nothing like you would experience on Mallorca. It is a small city filled with some of the world's best restaurants. The greatest concentration of Michelin stared restaurants in the world can be found between the País Vasco, the Pays Basque and Navarra. San Sebastian is also very Basque and welcoming.
