I like Zagreb too, but since you are getting that stopover in Zurich and won't be jet lagged, I would consider skipping it and getting in the car and heading straight to Plitvice. The reasons being (1) you need more time somewhere else to do some outdoorsy stuff (I get the sense you will all be disappointed if you don't) and (2) Plitvice is best seen as a split-stay anyway--that is, the late afternoon/early evening after day trippers move on, and early the next morning before they arrive.
I am so grateful for this advice, as we have figured out how to really maximize the split days in Plitvice, and staying one night nearby. I’d love your advice on which part of the NP to see in the evening, and which to visit/hike in the morning. If you have thoughts I can definitely use good advice here! We will have a rental car at this time so can go to any of the entrances.

We have a bit of a same situation , 50s, sons 20 and 22, one even named after st Donat in Zadar haha.
Thank you for this recommendation to try Batak. I know our boys will love to have a grill meal in Zagreb!

I am thinking we should visit the market in the morning to get some picnic foods to carry with us to Plitvice NP in the afternoon. Or perhaps there is a good supermarket or another place to do that, besides the fresh market? Food can really make memories!

When we visited Plitvice, we did the Upper Lakes on our first day in the late afternoon. We did the Lower Lakes the next day in the morning. We were on the trail by 9AM. This plan worked for us. I don't remember exactly why we planned it this way.

I have taken this advice to heart and we will be leaving the car once we arrive in Split, and then take a catamaran ferry to Dubrovnik, so that we have 2 almost-full days and 1 night in Dubrovnik. I know that will not be enough time in that city, but we decided to spend more time as Split as a base so that we can visit islands, and "just be" for bit on vacation, as we'll have an apartment there.

The thing is, if it worked for you it will probably work for us, too!

My Essential Croatia guidebook from Fodor's doesn't really give advice this way, so it's helpful and will allow me to figure it out from our farmhouse overnight, which is in Korenica.
