The Roman Arena, Piazza delle Erbe and Piazza dei Signori, Castelvecchio and Scalinger bridge, Scalinger tombs, the San Zeno Maggiore church, Sant'Anastasia, San Fermo Maggiore, Duomo, Teatro Romano, Giusti Gardens, Castel San Pietro ... there's enough for a full long day of sightseeing

I second Paulo's suggestions. Verona is one of my favorite Italian cities. It's just flat-out beautiful. And please, please skip "Juliet's Balcony." It's a tourist trap, and a historically bereft one, at that. Too much else to see and do. Visit the open market if you can.

One of the neatest things we did was tour the Arena. It is still used for an Opera season, and the marble seats surprised me in how comfortable they were! When we eventually saw the big colosseum in Rome, we had a better idea of how it must have looked (all the marble from there has been recycled over thousands of years...much put to exquisite use at St. Peters.) Stop at one of the big cafes in Piazza Bra for a glass of Prosecco and watch the folks on their evening strolls. We were there on a Saturday night and it was marvelous. (Check the prices however...we had drinks very inexpensively that evening, but stopped for pizza the next day at a different cafe just a couple doors down and found their prices to be a bit high. But it was hot and this place had the best shade....) Verona has some gorgeous residential areas just across the river. We spent two nights there as we enjoyed it so much. Castelvecchio is beautiful, and we saw a bride and groom having pictures taken on it's very VERY romantic bridge at sunset. That was way more romantic than the Juliet Balcony!

From my trip report:
Arrived in time to participate in the Sunday eve. stroll. Lovely town to get lost in. Beautiful scene from the Adige River and the Ponto Nuova bridge.
Piazza Bra has a beautiful Roman amphitheater (built in AD30) right in the middle of it, which is fun to visit and climb to the top. From there you can look over and view the city and watch the evening strollers around the Piazza. We visited only one of several stunning churches, the Cathedral of Verona. Piazza Erbe is a lovely place with an incredible 14th century fountain of the Madonna of Verona and 16th century statue of St. Mark's Lion. You must also see the Scaligeri Tombs just down from the Piazza Dei Signori. It's a masterpiece of 14th century Gothic funerary art. Needless to say, we missed alot of Verona but saw enough to know we'd like to go back
