PS: I'll add that if I was going to Napoli for food, I would probably head down early enough to see the fish market at Porta Nolana, , but before heading there I would make a beeline for Caffe Mexico across the street from the train station, and then also go get some warm fresh pastries at Attanasio just a few steps away.

After the fish market and some sightseeing, I would make the effort to go back to the train station area to eat a pasta and seafood lunch at Mimi alla Ferrovia (baba for dessert?)

and then head out for more sightseeing and coffees. Later in the day, before leaving to head back to Rome, I'd split a pizza.

Should we buy our train tickets when in Italy? I have heard conflicting things from people. I'm leaning towards just buying them when we're in Italy because it's not high season and it will give us the most flexibility, but i'm also a serious planner and it's hard for me to not buy things in advance!

It is a comfort-zone, personal choice thing. I'm big on wanting flexibility when I travel, so I rarely commit myself to a train schedule unless absolutely necessary, especially for day trips. Other people are big on savings and getting discounts, or just generally having a precise game plan to execute.

If you like to buy things in advance, I see very little financial downsides if you can get a really cheap ticket. You don't in reality lose any flexibility either. If you decide at the last minute you would really prefer to take a later train or an earlier train, you only lose the face value of the ticket in the process of buying a new one. But if you stick to your plan, you've got a bargain.
