Paros, Mykonos, and Santorini, you will find opinions and suggestions.
Providing information on how many days you will have after Athens, and what hotel budget you have in mind, will be helpful.

I would recommend Santorini (fly in only 45 min) stay for 2 or 3 days and go to Paxos by ferry. Santorini alone can keep you occupied. Like the other writers, rates and further info are based on the dates your visting. You will probably get some great responses.
Hotels have off season, shoulder and peak season rates.

I have been to Santorini, Rhodes and Mykonos. My husband and I loved Santorini and Rhodes (Mykonos not as much). We used the following website which gives a great description about the websites.

I recommend going in May/June - even in June we found it really hot. In Athens we stayed in the George Lycabetus, in Santorini I would not recommend it because of the location and in Rhodes http://www.mediterranean.gr/html/home.html

If this is your first trip to the islands, consider pairing Santorini with someplace other than Mykonos.
People love to pair these two and both are quite nice -- however, I would suggest that both derive so much of their ecoonomy from tourism that they are also selling a bit of fantasy as they strive to meet the expectation of outsiders.
That's fine. I think Santorini is so stunningly beautiful that it'd be a shame to miss it, but if you want to better sample Greek island life, then there are plenty of other islands. Paros would be a nice second island.

We also will be in Santorini for 2 or 3 days (probably 2 1/2). Were you suggesting to take a ferry to Paxos while staying on Santorini? I am just becoming familiar with the islands and their locations. Thanks

Keep in mind that if it's beaches you're after Santorini leaves much to be desired if you're looking for soft white-sand beaches. They don't exist there. The beaches are rock and gravel, mostly black or red, hot on the feet. But the water is fantastic-deep, blue and inviting.
