OK, this is all good, so as all replies indicate we will spend less time in Riquewihr.....so to make up the extra days we now have, thoughts on going to Heidelburg but staying and leaving our car in Ladenburg and catching a train into Heidelburg.
Would two full days do Heidelburg justice?
I also read that the best part of the Rhine is Rudesheim to St. Goar......does that sound right?

As far as the sightseeing cruise is concerned, yes. But once you're off the boat, there are numerous towns that may interest you - some outside the "cruise zone."
Linz am Rhein and Remagen are north of Koblenz on opposite sides of the river. Boppard and Braubach (Marksburg Castle) are just south of Koblenz, also on opposite sides.
Bacharach, Oberwesel and St. Goar (Rheinfels Castle) are good towns to visit within the "cruise zone" - Rüdesheim might be as well as long as you don't mind busloads of tourists and a few too many trinkets.
South of the cruise zone, Mainz, a city of some size rates a visit.
Don't try to visit all these towns by boat - the boat schedule is too inconvenient. Just stay on the boat from Rüdesheim or Bingen (across the river from R'heim) to St. Goar (south to north.) That takes 1.5 hours. Then use the trains for visiting the towns you wish to see. If you cruise the opposite direction it will take MUCH longer because of the river current.
Here's a map of the cruise zone:
