Go to San Gimignano and take them to the Torture Museum. In Florence take them to the Stibbert Museum which has a wonderful collection of armour and weapons throughout the ages - the Sala della Cavalcata is particularly impressive: a long room full of dummies in full armour mounted on horses.
Suggest you stay in an agritourism which has swimming pool, open spaces etc - try www.fattoria-pagnana.com
There is also the Pinocchio park at Collodi which is west of Florence but I have heard that it has recently been bought by a certain Mr. Preziosi (the #1 of toys in Italy) and might be undergoing renovation.

I just spent time in Tuscany with my two children ages 12 and 10. I must say, the very LAST place I would consider taking them is to a museum on torture!! I agree that an agriturismo that includes bed, breakfast and dinner, plus horseback riding and swimming is a nice option. Our children loved Madonna della Grazie on the Umbria/Tuscany border. You can link to it on the Karen Brown web site (www.karenbrown.com) They had a pool and the owner, Renato, teaches horseback riding. The dinners were an international affair with the other guests that was very fun.
