I am wondering this myself since my visit will likely include Monday.
EatItaly is open on Monday, although the restaurant(s) inside may be closed:

I'll be in Turin next Tuesday

It seems from their page that Eatitaly is closed on Monday :

Yes, I see that now. I thought originally that they were open daily..I got that idea from this page: "open everyday."

If you like to walk you can do a walking tour on the east side of the river. You can go up to the former monastery for a terrific view of the city. There's also a villa up there to visit. You can walk along the river to Valentino Park. There's the medieval village in the park. Too bad about Eataly. I was there on a Thursday and had a fabulous lunch.

The major walk to be sure to do is from Porta Nuova along via Roma to the castello area and then along via Po to the bridge to Gran Madre. Plenty of shops and many major sights along the way.
Once across the river, facing Gran Madre, to the left you will find via Monferrato, which has become a chic shopping area, but still has some of the neighborhood shops from years ago.
If you like chocolate, you might get a ChocoPass and let it be your guide for a stroll around the city.
